2. Next you need to disconnect each of the two bones inside while keeping the wing intact. This can be done by employing a similar technique as is used for "the fister" but this time don't remove the bones, just gently give each of them a twist inside the meat to free them up...It is very important for the wing to remain in its original shape. 3. Grab the wing at each
end with two hands... One hand holding the end of the large bone, and the other
hand holding the opposite end of the small bone.
