Beer butt chicken is all the rage these days, here's a great recipe! Scott's Beer Butt Chicken Ingredients:
1. Turn on your grill to a medium heat (both burners on) 2. Put down aluminum foil over the bottom portion of a broiler tray (or other flat metal tray) 3. Drink approximately 1/3 of your can of beer and use a can/bottle opener to puncture several holes in the top of the can. (It is essential that you drink the beer and not just dump it out, for purposely wasting good beer is a sin.) 4. Wash your chicken, remove the insides, and pat it dry with paper towels. 5. Dump approximately 1/4 of the seasoning (rub) into the beer can 6. Place the chicken's butt over the beer can and gently slide the chicken on top of the can. (use an appropriate level of olive oil as lube if necessary.) 7. Use the remaining olive oil to coat the outside of the chicken 8. Sprinkle the rub over the chicken and rub the spices on the skin and in-between the meat and the skin. 9. Stand the chicken/beer can on the middle of the broiler tray and place it on the middle of the grill. 10. Close the lid and cook for between an hour and an hour and a half at a medium heat (rotate the tray about four times). The chicken should get golden brown or even black on the outside but that is okay. 11. Use a meat thermometer to determine when the chicken is complete. The temperature should be between 170 and 180 degrees. 12. Remove the chicken from the grill, allow time for it to cool, use tongs to remove the can from the chicken's butt, cut, and serve the chicken (make certain not to spill the beer can as it is extremely hot!!!).
